Why does blue cheese dressing have a 'Sell by date'? Shouldn't it just get bluer and cheesier?

Reposted yet again for Best of Half Nekkid Thursday 2005. This was an easy choice given that my only other entry was a nasty looking post-IV...
If that is the case the stuff in that jar are bluer and cheesier than it should be because that is about 2-1/2 months too old.
